RATIONAL combi steamers

In 1976, RATIONAL revolutionized the professional kitchen with the introduction of the steamer. Its success has been overwhelming: more than 300,000 RATIONAL steamers are in daily use worldwide, and virtually every second kitchen appliance installed today is a RATIONAL steamer.

What is a RATIONAL steamer?

RATIONAL steamers, also called combi steamers, are versatile cooking appliances that use a combination of steam and dry heat to cook food.

How does a RATIONAL steamer work?

RATIONAL steamers require a water supply to generate steam. This can be a direct connection to a water supply or a manual filling system, depending on the model. The steamer has heating elements that generate heat for both dry heat cooking (convection) and steam generation. When steaming is selected, water is heated and converted to steam, which is then injected into the cooking chamber. In convection mode, heating elements heat the air and a fan circulates it through the cooking chamber, providing even heat distribution. The magic of a RATIONAL steamer, however, lies in its ability to combine steam and dry heat. This provides precise control over the cooking environment, resulting in perfectly cooked food with optimal texture and moisture retention. Many RATIONAL combi steamers feature advanced control systems, including pre-programmed recipes and sensors that monitor the cooking process. These controls automatically adjust temperature, humidity and cooking time to ensure consistent, high-quality results. The user selects the desired cooking mode and sets the temperature and time (or chooses a pre-programmed recipe). The steamer then takes over and automatically controls heat, steam and airflow to cook the food perfectly. This combination of features makes RATIONAL combi steamers a popular choice in professional kitchens because they offer efficiency, versatility and consistent cooking results.

RATIONAL steamer maintenance

Regularly inspect the steamer for any signs of wear or damage. Watch for leaks, loose parts and any abnormalities in operation. Check and clean the filters regularly according to the manufacturer's instructions. Clogged filters can reduce the efficiency of the combi steamer. Depending on the water hardness in your area, you may need to descale the steamer periodically. This removes limescale deposits that can affect performance and shorten life. Have the combi steamer checked periodically by an authorized RATIONAL service partner. They can identify and resolve any problems before they cause serious damage.

RATIONAL steamer cleaning

Clean the RATIONAL steamer after each use. Remove food residues and grease splashes with a damp cloth and a mild detergent. RATIONAL combi steamers are equipped with automatic cleaning programs that make cleaning easier. Use these programs regularly according to the manufacturer's instructions. Use only the cleaning agents recommended by RATIONAL. Other agents may damage the steamer or affect its performance. Clean the accessories, such as grids and baking trays, regularly. These can often be put in the dishwasher.
